Ingredients:

For Saffron Infusion:

  • A pinch of saffron strands
  • 2 tablespoons warm milk

For Almond Paste:

  • 1/2 cup almonds, soaked and peeled
  • 2-3 tablespoons warm milk

For the Milk:

  • 4 cups milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands
  • 1-2 tablespoons warm milk (for saffron)
  • A few slivered almonds and pistachios for garnish
  • A few strands of saffron for garnish (optional)

Instructions:

  1. Prepare the Saffron Infusion:
    • Place a pinch of saffron strands in a small bowl.
    • Add 2 tablespoons of warm milk to the saffron strands.
    • Gently crush the saffron strands with the back of a spoon to release their colour and aroma.
    • Allow the saffron to infuse in the milk while you prepare the other ingredients.
  2. Make the Almond Paste:
    • Soak the almonds in hot water for 30 minutes or until their skins soften.
    • Drain the almonds and peel them.
    • Place the peeled almonds in a blender or food processor.
    • Add 2-3 tablespoons of warm milk to the almonds.
    • Blend until you get a smooth almond paste. Set it aside.
  3. Heat the Milk:
    • In a large, heavy-bottomed saucepan, pour 4 cups of milk.
    • Heat the milk on medium-high heat, stirring continuously to prevent it from sticking to the bottom of the pan.
    • As the milk comes to a boil, reduce the heat to low and let it simmer for about 10-15 minutes, stirring occasionally. This reduces the milk slightly and makes it creamier.
  4. Add Sugar and Almond Paste:
    • Once the milk has thickened a bit, add the almond paste and sugar.
    • Stir continuously to ensure the sugar dissolves and the almond paste blends well with the milk.
  5. Add Cardamom and Saffron:
    • Add the cardamom powder to the milk and stir.
    • Pour the saffron-infused milk into the saucepan. Stir well to distribute the saffron's colour and flavour throughout the milk.
  6. Simmer and Garnish:
    • Let the saffron almond milk simmer for another 5-10 minutes, allowing the flavours to meld.
    • Turn off the heat and let it cool slightly.
