To unlock their flavour, heat oil or ghee in a pan. When hot, add the cumin seeds and watch for them to sizzle and turn fragrant - about 30 seconds. This is called tadka. Now add your onions, vegetables, or lentils and continue cooking as usual. The tadka infuses the dish with cumin's warm, earthy aroma.
