Classic Jeera Rice Recipe: Perfect for Any Meal

Ingredients

  • 1 cup basmati rice, aged
  • 1¾ cups hot water
  • 2 tablespoons ghee
  • 2 teaspoons jeera (cumin seeds)
  • 1 bay leaf (tej patta)
  • 1 green chilli, slit (optional)
  • ¾ teaspoon salt, or to taste
  • 2 tablespoons fresh coriander leaves, chopped

Instructions:

  1. Rinse basmati rice thoroughly in cold water until water runs clear (about 3-4 times). Soak in water for 30 minutes, then drain well.
  2. Heat ghee in a heavy-bottomed pan over medium heat until shimmering. Add cumin seeds and bay leaf. Let cumin splutter and turn slightly darker (about 30 seconds).
  3. Add optional green chilli and drained rice. Sauté gently for 2 minutes until rice is well coated with ghee and slightly toasted.
  4. Add hot water and salt. Stir once gently. Bring to a boil over medium-high heat.
  5. Reduce heat to lowest setting, cover with a tight-fitting lid (or use foil under lid for better seal). Cook for 15 minutes without disturbing.
  6. Turn off heat. Let rice rest, covered, for 5 minutes.
  7. Remove lid, discard bay leaf. Fluff rice gently with a fork.
  8. Garnish with fresh coriander and serve hot.

Tips

  • Use aged basmati rice for best results
  • Hot water helps rice cook evenly
  • Don't over-stir after adding water to prevent breaking rice grains
  • Keep lid sealed throughout cooking
  • If rice is still firm after cooking, sprinkle 2 tablespoons hot water and cook covered for 5 more minutes

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 2 days
  • Reheat with a sprinkle of water in microwave or steam
