Fish Biryani: A Spicy Twist on a Classic Indian Dish

Ingredients:

  • 500g basmati rice
  • 500g fish fillets (any white fish like cod, haddock, or tilapia)
  • 2 onions, finely sliced
  • 3-4 green chilies, slit lengthwise
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1/2 cup plain yogurt
  • Salt, to taste
  • 1/2 cup vegetable oil
  • 2 tbsp ghee
  • 1 cup chopped coriander leaves
  • 1 cup chopped mint leaves
  • 2 cups hot water

Instructions:

  1. Wash and soak the basmati rice in cold water for 30 minutes. Drain the water and set aside.
  2. Cut the fish fillets into bite-sized pieces and marinate with 1/2 tsp of turmeric powder and 1/2 tsp of salt. Keep aside for 15-20 minutes.
  3. Heat the vegetable oil in a deep bottomed pan and fry the sliced onions until golden brown. Add ginger-garlic paste and green chilies and sauté for a minute.
  4. Add the marinated fish pieces to the pan and cook for 5-7 minutes or until the fish is cooked through. Remove from heat and set aside.
  5. In a separate pot, heat the ghee and add the cumin powder, coriander powder, garam masala powder, and red chili powder. Fry the spices for a minute.
  6. Add the soaked basmati rice to the pot and fry for 2-3 minutes. Add hot water, salt to taste, and mix well. Cook on medium heat until the water is absorbed and the rice is cooked.
  7. Preheat the oven to 180°C. In a large baking dish, layer the rice and fish mixture alternately, starting and ending with a layer of rice. Sprinkle chopped coriander and mint leaves over the top.
  8. Cover the dish with a foil and bake in the preheated oven for 15-20 minutes.
  9. Serve hot with raita or salad.
