Amchur adds a sharp, citrusy sourness, stirred in near the end or used as a dry rub. Asafoetida is bloomed in hot oil at the start of cooking for a savoury, onion-garlic note. Kashmiri chilli goes in early too, for colour without much heat. Kasoori methi finishes things off, crushed and stirred through at the very end.
